Fortune is an enchantment for pickaxe, shovel, and axe, it grants more resources from a shattered block or plant.
For a pickaxe for coal, diamond, emerald, quartz, and lapis lazuli:
Fortune 1 - 33% chance that twice as many resources will fall out
Fortune 2 - 50% chance that 2 or 3 times more resources will fall out
Fortune 3 - 60% chance that 2, 3 or 4 times more resources will fall out
For redstone ore, carrot, glowstone, melon, nether wart, potato, and wheat (seeds only):
Fortune 1 - drops 1 more resource
Fortune 2 - drops 2 more resources
Fortune 3 - drops 3 more resources
For tall grass:
Fortune 1 - drops 2 more resources
Fortune 2 - drops 4 more resources
Fortune 3 - drops 6 more resources
For a shovel when mining flint from gravel:
Fortune 1 - a chance to get flint14%
Fortune 2 - a chance to get flint 25%
Fortune 3 - a chance to get flint 100%
Fortune is also suitable for enchanting a fishing rod.
